    1 large  Garlic Clove, Minced
    1 T  Olive Oil
    28 ounce  Tomato
    1/8 t  Pepper
    1/4 t  Oregano
    1/4 t  Basil
    1 T  Parsley, Chopped
      Salt, To Taste

In a large sauepan, saute the garlic in the oil over moderate heat
for 2 min.

Empty the tomatoes and their juices into a mixing bowl and crush the
tomatoes with your hands. Add the tomatoes to the saucepan. Add the
pepper, oregano, basil and parsley. Bring the sauce to a boil over med-
high heat. Cook the sauce at a steady simmer, stirring occasionally,
for 18-20 min or until the sauce has thickened and reduced to about 2
cups. Add salt to taste. The sauce can be prepared ahead and will
keep, covered and refrigerated, for 4-5 days. The sauce can also be
frozen. Let the sauce cool for at least 30 min before using it on
pizza.
