KEY LIME PIE

1 graham cracker pie crust | |
14 oz | can low fat sweetened condensed milk |
2/3 | nonfat plain yogurt |
2 tsp. | grated lime zest |
1/4 tsp | lime oil, (opt.) |
1/2 C | key lime juice, (fresh or bottled) |
1 1/2 tsp | unflavored gelatin |
Whisk together milk, yogurt, zest, and juice. In a small heavy saucepan sprinkle the gelatin over 2 Tbl cold water. Let soften for 1 minute. Heat over low heat stirring until gelatin is dissolved. Whisk into the lime mixture. Turn into pie shell and chill several hours. Serve with whip cream on top. Can buy lime oil in gourmet cooking stores.
