<RecipeText>Mix to incorporate

Add yeast water
Beat on high 60 seconds

Add Spelt flour 1/4 C at a time, until it pulls together into 1 ball, roughly 2-3 C.

Drizzle with olive oil &amp; spin to coat.

Set oven temp halfway between OFF &amp; 150•
cover with towel allow to rise 1-2 hr
Punch down
Allow to rise another 1-2 hr

Heat oven to 350•
Split into 4 pieces working with 1 ball at a time
Press out ball into even circle on baking stone about 1/4&quot; thick &amp; 8-10&quot; dia
Pierce dough with fork all around
Bake 8 min

Remove from oven &amp; top with sauce &amp; topping
Bake approx 5 min or until ready
