Bran Muffins

1 C | flour |
2 1/2 tsp | baking powder |
1/2 tsp | baking soda |
1/2 tsp | salt |
1 C | milk |
1/4 c | oil |
1/2 C | sugar |
1 1/4 C 100% | bran |
1 | egg |
1 C. | raisins, (optional) |
Combine flour, baking powder, baking soda, and salt, set aside. Mix bran with milk until bran is softened. Add egg and oil, beat till blended. Add flour mixture, stir until just combined. Do not overmix. Fill greased muffin tins, bake at 400 for 20 minutes.
