<RecipeText>Mix crackers and cheese together. Dip chicken in butter, then cover completely with cheese mixture. Put in ungreased baking dish and cover securely with foil. Bake long and slow---275 for 2 1/2 hours. Chicken tastes best if chicken is room temperature when you begin to cook it. Can make ahead, but allow to return to room temperature before baking.
