Dijon Crusted Chicken Breasts

1/3 c. | dry bread crumbs |
1 Tb. | grated Parmesan cheese |
1 tsp. | Italian seasoning |
1/2 tsp. | dried thyme |
1/4 tsp. | salt |
1/4 tsp. | pepper |
4 | boneless skinless chicken breasts |
2 Tb. | Dijon mustard |
1 tsp. | olive oil |
1 tsp. | reduced-fat margarine |
1. Place the first six ingredients in a shallow bowl. Brush chicken with mustard; roll in crumb mixture.
2. In a large skillet, cook chicken in oil and margarine over medium heat for 5-6 minutes on each side or4 until juices run clear.
