Roasted BBQ Chicken

1. Preheat your oven to 350 degrees. You can use a whole chicken for roasted bbq chicken, or you can use chicken pieces, whichever you prefer. If you're using a whole chicken, it might take a bit longer for roasting.
2. Clean the chicken, rinsing it in cool water, and pat it dry with paper towels. Arrange chicken pieces in a large shallow pan. If you're doing a whole chicken, put it into a roasting pan, but leave the lid off.
3. Baste the chicken with bottled bbq sauce, or with your own recipe. Thicker is better, it doesn't run off as easily. Roast the chicken for an hour, or until it is fully cooked. Make sure it is cooked next to the bone. You can use a thermometer to make sure it reaches 165 degrees inside. You can rebaste the chicken with bbq sauce several times during the cooking process to give it more flavor, but make sure your last basting is under 15 minutes before it's done cooking.
Cheryl's Notes: I prepared chicken quarters the day before and placed in large roasting pan covered with foil. Then roasted the next day on convection setting at 350 for 45 minutes (covered with foil the first 30 minutes, removed foil last 15 minutes).
