Preparazione
1. Sciogliete il burro in un pentolino su fiamma bassissima, tritate i biscotti nel mixer e, con l&apos;apparecchio in movimento, versate il burro a filo. Compattate il composto ottenuto sul fondo di uno stampo a cerniera del diametro di 16 centimetri, rivestito con carta oleata e passate lo stampo in frigo.
2. Tritate 40 g di cioccolato fondente e scioglietelo a bagnomaria. Montate Philadelphia Classico con lo zucchero fino ad ottenere una crema omogenea. Unite la panna acida, le uova, la farina setacciata con il cacao, il cioccolato sciolto ed il cioccolato rimasto tritato non troppo finemente ed amalgamate gli ingredienti.
3. Versate l&apos;impasto nello stampo preparato e cuocete il cheesecake in forno preriscaldato a 160° per 45 minuti. Lasciatelo raffreddare e spolverizzatelo a piacere con poco cacao.
