Homemade Garden Burger

2 tablespoons | olive oil |
1 tablespoon | ground flax seeds |
1 | grated carrot |
1 | finely chopped onion |
1 | grated sweet potato |
1 cup | flour |
1 teaspoon | baking powder |
Salt | |
pepper to taste | |
2-3 tablespoons | vegetable oil |
1/2 cup | if plain vegan yogurt |
1/4 cup | ketchup |
2 tablespoons | pickle relish |
In a small bowl stir together the olive oil and ground flax seeds.
In a large bowl combine the oil and flax seeds, carrot, onion, sweet potato, flour and baking powder. Add salt and pepper to taste.
Form mixture into 5-6 inch patties; set aside.
Prepare yogurt sauce; in a small bowl combine yogurt, ketchup and relish.
In a large skillet, heat oil until very hot. Sauté burgers for 4 minutes per side, or until browned. Serve on buns with yogurt sauce. Serves 4 to 6.
