Raspberry Truffles

8oz | semi sweet choc chips |
1/2 cup | unsalted butter |
3 | egg yolks |
1/2 cup | seedless raspberry jelly |
1 lb | white chocolate |
1/4 cup | red color sugar |
Melt chocolate
Beat in butter and eggs
Fold in jelly until it forms ribbons
Chill 1-3 hours
Roll into 1 inch balls and freeze
Dip in white chocolate
Sprinkle with red sugar
