Oven- Roasted Zucchini

4 medium | zucchini, quarter-cut lengthwise, then cut in half widthwise |
1 teaspoon | extra-virgin olive oil |
1 teaspoon | no-salt lemon-pepper seasoning |
Alternate
Use yellow squash or equal portions of yellow squash and zucchini.
DIRECTIONS
Preheat the oven to 450°F. Place the zucchini in a large baking dish. Add the oil and toss to coat.
Add the lemon-pepper seasoning and toss.
Bake for 10 minutes. Toss.
Bake for 10 minutes longer, or until tender.
Raise the oven temperature to broil. Broil for 3 to 5 minutes, or until browned but not burned.
Recipe Tips
If you're preparing this recipe in a Ripped Phase, substitute olive oil spray for the olive oil.
