Lamb and Aubergine casserole

3 lb | lamb cubes |
1 to 2 tbsp | olive oil |
1 cup | chopped onion |
2 cans | chopped tomatoes |
2 cloves | garlic |
1 1/2 cups | water |
3 tsp | salt |
1/2 tsp | thyme |
1/2 tsp | basil |
2 med | aubergines, peeled and cut in cubes |
1 cup | uncooked long grain rice |
Brown lamb in oil
Then add onion and cook until onion is tender
Add tomatoes, garlic, water, salt, and herbs
Then add aubergines and rice.
Place everything in large casserole and cover
Bake @ 180c for an hour or hour and a half
