<RecipeText>Preparazione:
Preparate tutte le verdure ben mondate e lavate. Se acquistatele cipolline con la buccia, spellatele. Raschiate e lavate le carote, pulite il cavolfiore, dividetelo a cimette e lavatele bene. Spuntate i fagiolini, tagliateli in due o tre pezzi, secondo la lunghezza e, lavateli. Staccate le costole del sedano, staccando le foglie e spezzando i gambi in piu&apos; parti, per eliminare gli eventuali filamenti.Dopodiche&apos; tagliate le carote a listerelle (usando se avete l&apos;utensile che produce anche le scanalature); riducete ulteriormente la grossezza delle cimette di cavolfiore; tagliate il sedano a mezze rondelle o a bastoncini.Immergete le verdure in una soluzione di acqua e limone. Quindi scottatele in una casseruola capiente piena d&apos;acqua bollente salata, le verdure «bianche», tutte assieme; in un&apos;altro recipiente scottate carote e fagiolini.I tempi di cottura variano da 5 a 10 minuti. Quindi scolate bene le verdure, distendetele su un canovaccio ad asciugare.Disponetele nei vasi, fino a un cm dal collo. Preparate quindi la soluzione di governo, calcolando una parte d&apos;aceto ogni 5 d&apos;acqua; salate ed aggiungete un paio di foglie d&apos;alloro, aglio, qualche chiodo di garofano, qualche granello di pepe e qualche fogliolina di basilico. Lasciate bollire la soluzione per 5 minuti, poi levatela dal fuoco e versatela lentamente nei vasi, scuotendoli di tanto in tanto per eliminare i vuoti d&apos;aria all&apos;interno.Riempite i vasi, versate in superficie un filo d&apos;olio, chiudete i barattoli e passateli alla sterilizzazione che dovra&apos; durare circa 30 minuti..
