SPINACH CILANTRO PESTO
    1 cup  spinach leaves, loosely packed
    1/4 cup  finely chopped cilantro
    3 cloves  garlic
    1/4 teaspoon  ground cumin
    1 tablespoon  grated parmesan cheese
    2 teaspoons  olive oil
    2 teaspoons  lemon juice
    1-2 tablespoons  water

Combine all pesto ingredients except olive oil, lemon juice and
water in a blender or food processor and pulse blend until
coarsely chopped. Gradually add olive oil and lemon juice until
mixture is finely chopped. Add water if needed to make a paste.

Makes 8 Servings
Serving Size: 1 tablespoon
