Apple & Blackberry Crumble (Karen Martini)

120 gr | butter at room temp |
100 gr | plain flour |
100 gr | de drees sugar |
50 gr | ground almonds |
50 gr | hazelnuts, toasted, skinned & chopped |
50 gr | almonds, toasted |
70 gr | blended oats |
1/2 teaspoon | ground cloves |
1 heaped teaspoon baking powder | |
250 gr | caster sugar |
1/2 | vanilla bean, split |
Zest of 1/2 | lemon |
8 large | golden delicious apples, peeled, cores & sliced into 2cm pieces |
200 gr | blackberries |
boysenberries, alternative |
Preheat oven to 210C fan forced (230C conventional)
For Crumble:
In a medium bowl, rub in butter into flour
Add caster sugar, almonds, nuts, oats, cloves & baking powder
Stir gently
In a wide pan over medium heat, boil 100 ml water, demerera sugar, vanilla bean, lemon zest
Add apples & simmer for 6 miinutes
Reduce heat to low & poach apples for 15 minutes more
Spoon apples into a 25cm baking dish
Scatter berries over
Top with crumble
Bake for 20 minutes
