Pineapple Turkey Salad

Ingredients
    12 ounces  roasted, sliced turkey breast
    8 ounces  Pineapple Salad dressing, (see recipe)
    1 pound  mixed salad vegetables, (see recipe)
    1 cup  chopped green leaf lettuce
Pineapple Salad Dressing:
    1/2 cup  frozen concentrate pineapple juice
    1/4 cup  champagne vinegar
    2 tablespoons  extra virgin olive oil
    1/2 teaspoon  sea salt
    1/4 teaspoon  medium ground black pepper
    1 tablespoon  fresh, chopped mint
Mixed Vegetables:
    2 cups  fresh pineapple, peeled and sliced
    1 cup  julienne sugar snap peas
    1 cup  julienne red peppers
    1/4 cup  julienne fresh jicama
    1/2 cup  shredded carrots
    1/2 cup  julienne red onions
    1/2 cup  fresh chopped cilantro

Instructions
1. Preheat grill.
2. Peel and slice pineapple. Grill only to soften slightly. Do not overcook.
3. Dice grilled pineapple and place in a medium sized bowl. Add julienne sugar snap peas, red peppers, jicama, carrots, onions and cilantro. Toss together.
4. Chop sliced turkey.
5. In a small bowl combine all dressing ingredients except the olive oil. Slowly whisk in the olive oil.
6. In a medium bowl, combine turkey with vegetable mix and toss with dressing. Divide into 4 equal portions and serve over chopped lettuce.
