Pineapple Turkey Salad

Ingredients | |
12 ounces | roasted, sliced turkey breast |
8 ounces | Pineapple Salad dressing, (see recipe) |
1 pound | mixed salad vegetables, (see recipe) |
1 cup | chopped green leaf lettuce |
Pineapple Salad Dressing: | |
1/2 cup | frozen concentrate pineapple juice |
1/4 cup | champagne vinegar |
2 tablespoons | extra virgin olive oil |
1/2 teaspoon | sea salt |
1/4 teaspoon | medium ground black pepper |
1 tablespoon | fresh, chopped mint |
Mixed Vegetables: | |
2 cups | fresh pineapple, peeled and sliced |
1 cup | julienne sugar snap peas |
1 cup | julienne red peppers |
1/4 cup | julienne fresh jicama |
1/2 cup | shredded carrots |
1/2 cup | julienne red onions |
1/2 cup | fresh chopped cilantro |
Instructions
1. Preheat grill.
2. Peel and slice pineapple. Grill only to soften slightly. Do not overcook.
3. Dice grilled pineapple and place in a medium sized bowl. Add julienne sugar snap peas, red peppers, jicama, carrots, onions and cilantro. Toss together.
4. Chop sliced turkey.
5. In a small bowl combine all dressing ingredients except the olive oil. Slowly whisk in the olive oil.
6. In a medium bowl, combine turkey with vegetable mix and toss with dressing. Divide into 4 equal portions and serve over chopped lettuce.
