Chicken Salad

1/2 cup | greek yogurt |
1/2 | cucumber, 8-oz., cut into strips |
2 t | coarse salt |
12 oz | boneless, skinless chicken breast |
1 T | lemon juice |
1 clove | garlic, minced,, (about 1.5 t) |
1/3 c | fresh mint |
1 T | fresh oregano |
Cook chicken breasts and shred into 1" chunks and let cool. If time permits, strain yogurt for 30 minutes. Combine yogurt, cucumber, 1/2 t salt, lemon juice, garlic and season with pepper.
