    1/2 cup  greek yogurt
    1/2  cucumber, 8-oz., cut into strips
    2 t  coarse salt
    12 oz  boneless, skinless chicken breast
    1 T  lemon juice
    1 clove  garlic, minced,, (about 1.5 t)
    1/3 c  fresh mint
    1 T  fresh oregano

Cook chicken breasts and shred into 1" chunks and let cool. If time permits, strain yogurt for 30 minutes. Combine yogurt, cucumber, 1/2 t salt, lemon juice, garlic and season with pepper.
