Chocolate Chunk Cookies

1 cup | unsalted butter, room temperature |
1 cup | brown sugar |
1/2 cup | granulated sugar |
2 large | eggs |
1 1/2 tsp | vanilla |
3 cups plus 2 Tbsp | flour |
1 tsp | baking soda |
16 ounces | chocolate chunks |
Heat oven to 350. Line two heavy baking sheets with parchment paper, or lightly butter them.
In bown of electric or stand mixer, cream the butter and both sugars until light & fluffy. Add eggs, one at a time, beating well and scraping after each addition.
Beat in vanilla.
Sift dry ingredients together. Add to butter mixture, mixing just until combined.
Fold in chocolate chunks.
Optional: chill dough 1 hour
Shape dough into balls the size of large walnuts. Place 2 inches apart on baking sheets. Stagger rows to ensure even baking. Bake 12 to 15 minutes or until tops are light brown.
Cool cookies on sheets for 5 minutes, then trasfer to wire racks.
