<RecipeText>400 gms chocolate, plain

Method:

1.Batter a 23 cm baking pan.
2.Line the pan with waxed paper.
3.Heat oven to medium heat (180*C), sift flour, salt and set aside.
4.Crush or finely chop hazelnuts.
5.Grate half of chocolate &amp; cut the other half into pieces.
6.In a large bowl, beat brown sugar and butter, until fluffy.
7.Beat in egg yolks one after the other.
8.Add some of the flour after the addition of each egg and continue beating.
9.Stir in grated chocolate and 2/3 quantity of hazelnut.
10.Beat egg whites until stiff &amp; stir into cake mix.
11.Pour batter over paper in pan.
12.Bake in oven for about 1 hour or until a knife comes out clean when inserted in the middle of cake.
13.Remove cake from oven and leave to cool slightly.
14.Invert cake on a wired to cool and peel waxed paper.
15.Move to a serving platter.
16.Cut cake crosswise into 2 equal parts.
17.Spoon whipped cream over one half of the cake, sprinkle half of the hazelnuts and top with the other cake half.
18.In a small pan, put chocolate pieces, powdered sugar and 4 tbsp water.
19.Heat in a bath of hot water over medium heat, stirring constantly until chocolate melts.
20.Spread immediately all over cake and decorate with remaining hazelnut.

N.B: Replace whipped cream filling with chocolate mousse+hazelnut or no filling at all.
