1 cup | water |
3 oz | butter |
1/2 tsp | salt |
1 cup | all purpose flour |
3-4 | eggs |
1/2 cup | grated cheese,, (grana, gruyere or other hard cheese), can use more cheese to taste |
1, Melt water, butter & salt over medium heat.
2. Stir in flour with a wooden spoon.
3. Continue stirring until batter has a paste-like consistency. Cook for 3-4 minutes to be sure that flour is cooked.
4. Remove from heat & continue stirring until batter is only warm.
5. Stir in eggs one at a time (stop when desired consistency is reached)
6. Add cheese.
7. Fill piping bag & pipe onto sheet pans lined with silpat.
8. Bake at 375 degrees until golden brown (10+ min).
