French apple tart

400g | shortcrust pastry |
6 | golden delicious apples, (3 peeled and chopped, 3 peeled and sliced) |
1 vanilla pod split length ways | |
25g | unsalted butter |
3tbsp | caster sugar |
Oven. Gas6/200C
Roll out pastry and line a 27cm loose based tin. Trim excess and chill for 1 hour. Prick the pastry all over, cover with parchment and baking beans. Bake for 15 mins. Remove paper and beans and bake for a further 10 mins u til just golden
Put chopped apples, vanilla pod, 10g butter and 2 tbsp sugar into a pan. Add 4 tbsp water and cook gently for 10-15 mins until the apple is soft. Remove pod and puree.
Spread the puree over the tart base and cover with apple slices, slightly overlapping. Melt the remaining butter and brush over the apple. Sprinkle with the remaining sugar and bake for 25-35 mins, until just browned.
