Compute of spiced fruit

8oz | fresh dark plums |
8oz | fresh peaches |
4oz | soft dark sugar |
1/4 pint | cider vinegar |
2tsp | coriander seeds |
1/2 tsp | allspice |
Zest and juice of one lemon | |
Pinch | sea salt |
Cut the plums and the peaches in half and remove stones. Preheat wok on low setting, then add the cider vinegar and dissolve the sugar. Add the spices, lemon zest and juice and salt. Add the fruits to the wok, cover and simmer gently for 15 mins. Check regularly and top up with water as required to prevent fruit drying out. Remove from heat and allow to cool still covered. Pour into a container and refrigerate until ready to use. Serve cold or warmed with low fat yogurt or low fat fromage frais.
