Spicy lamb with sweet potatoes

2 | red onions |
2 | garlic cloves |
1lb | lean diced lamb |
1tsp | medium curry powder |
1tsp | flour |
3/4 pint | vegetable stock |
1lb | sweet potatoes |
400g can | chopped tomatoes |
Salt | |
pepper |
Oven=180C/GM4
Dry fry onions and garlic until soft. Add lamb and continue turning until sealed. Sprinkle on curry powder and flour and cook for 1 min.
Gradually stir in the stock. Add potatoes and tomatoes and bring the sauce to a simmer. Season and tar to casserole dish.
Cover and cook in oven for 1 1/2 to 2 hours until meat tender. Serve with fresh veg.
