<RecipeText>Directions:
Heat the vegetable oil in a large saucepan over medium-low heat. Add the onions, carrots, celery, and potato and sauté 5 minutes, stirring occasionally.

Add the vegetable stock, lentils, and tomatoes. Salt and pepper to taste.

Increase the heat to medium-high and bring to a boil. Reduce the heat to low and simmer 40 minutes. Adjust seasonings, if necessary.

Transfer to large, individual soup bowls. Garnish the bowls with parsley sprigs and serve hot.
