2 | eggplant, mdm plus size |
1/3 cup | lemon juice |
1/3 cup | tahini |
2 cloves | crushed garlic |
3/4 tsp | salt |

Pierce eggplant with fork. Place on cookie sheet or shallow pan. Place under broiler for about 1/2 hour. Turn once. Skin will char and eggplant will begin to collapse. Cool, split open with knife, and scoop out. Mix all ingredients with a fork.
