Fresh Apple Cake

| 2 Cup | sugar |
| 2 | eggs |
| 1 Cup | salad oil |
| 2 teaspoons | vanilla |
| ADD & MIX, batter wil be very stiff | |
| 2 Cups | flour |
| 1 tsp | baking powder |
| 1 tsp | baking soda |
| 1 tsp | cinnamon |
| 1/2 tsp | salt |
| ADD | |
| 3 cups | diced fresh apple, leave skins on apples |
| 1 cup | chopped nuts &/or raisins |
Bake at 350 - 40-50 minutes or longer.(s).
Grease and flour pan.
Makes 1 bundt pan or 1 loaf pan or 4 mini loaves.*
*Note: Batter rises significantly making a chewy/crispy top. Do not fill pans too full.
