    1/2 cup  butter
    1/2 cup   flour
    2 1/2 pts.  chicken stock or water and stock base
    1 tbsp.  MSG
      salt to taste
    1/2 cup   carrots, diced or shredded
    1/2 cup  onions, minced
    1/2 tsp.   mustard, dry
    6 oz.   cheddar cheese, medium or sharp grated.
    1 11 oz.   bottle of beer
Saute onions until clear but not brown. Blend in flour, mustard, and chicken stock or water. Cook gently for a few minutes. Add cheese and beer, simmer until the cheese has melted.
