Vegan Zesty Spinach, Mushroom and Tomatoes

Zesty Spinach, Mushroom and Tomatoes Ingredients (use vegan versions): | |
1 large bunch | spinach or other green leafy vegetable. |
1 large or 2 small | tomatoes, diced thick |
5 to 6 button or crimini mushrooms, chopped | |
1/2 small | onion, diced |
2 to 3 cloves | garlic |
1 tablespoon | olive oil |
1 tablespoon | fresh oregano, finely chopped or 1 teaspoon dried |
1/4 | lemon |
A pinch | salt, if desired |
Directions:
1) Heat oil in skillet on medium heat. Add onion and cook until translucent. Add garlic, tomato, mushrooms and oregano. Stirfry 2 minutes or until mushrooms reach desired tenderness. Add spinach and cook till just wilted, a few seconds. Squeeze lemon over vegetables and serve. Goes great with anything.
