Garlic Blue Cheese Sauce

3/4 cup | heavy cream |
1 | garlic clove, thinly sliced |
6 ounces | blue cheese, crumbled |
black pepper |
In a medium saucepan over medium-high heat, bring cream and garlic just to a boil. Lower heat and simmer until cream coats the back of a spoon, approximately 5-10 minutes. Remove from heat and stir in the crumbled blue cheese. Season.
Serve with standing rib roast.
