1 large | tomato, cored, seeded and diced |
1 | red bell pepper, roasted, peeled, seeded and diced |
1/2 cup | black olives, pitted and diced |
2 cloves | garlic, minced |
1 tablespoon | fresh basil, chopped |
1 tablespoon | fresh oregano, chopped |
1 tablespoon | fresh parsley, chopped |
3 tablespoons | olive oil |
1 tablespoon | balsamic vinegar |
salt and pepper, to taste | |
toasted Italian bread slices | |
Asiago cheese, grated |
Combine all but bread and cheese. Spoon onto toasted bread and top with cheese.
Makes about 16 - 20 pieces.
