Farmer's Omelet

2 Tbs | butter |
2 cups | diced, uncooked potatoes |
1/4 cup | onion, finely chopped |
1 cup | diced ham |
1/4 cup | chopped fresh parsely, (optional) |
6 large | eggs |
1/2 tsp | salt |
pepper to taste | |
2 Tbs | milk |
1/2 cup | shredded colby or cheddar cheese |
1 Melt butter in a 10-in nonstik fry pan. Add potatoes & onion, cover & cook over medium heat for 20 minutes, stirring occasionally to brown evenly or until potatoes are tender & golden brown. Add ham, heat through then sprinkly with parsley.
2 Beat eggs, milk, salt & pepper togeter in a bowl. pour over the potato mixture. Cover pan & cook 10 minutes or until eggs are almost set.
3 Uncover pan & check often. With a spatula, lift around edge of eggs & allow egg mixture to run under omelet during cooking.
4 Sprinkle with cheese.
5 Cover & cook until cheese melts.
6 Cut into wedges & serve.
