Courgette and Cheese

1 spray | cooking spray |
2 | courgettes, 4 oz |
1 tbsp | plain flour |
1 pinch | oregano |
1 pinch | black pepper |
1 | tomato |
½ oz | low fat cheese |
1 tbsp | parmesan cheese, grated |
1 tbsp | low fat plain yogurt |
1 tsp | reduced fat olive spread |
1 slice | wholemeal bread, additional |
2 servings | salad leaves, additional |
2 tsp | low fat salad dressing, additional |
1. Preheat oven to 180°C. Spray a small casserole dish with cooking spray.
2. Slice courgettes into ¼" slices.
3. In a medium bowl, combine flour, oregano and pepper. Toss courgette slices in seasoned flour and coat well.
4. Slowly heat margarine iln a nonstick frying pan. Sauté slices for about 4 minutes per side or until golden brown. Drain on paper towels.
5. Cover bottom of baking dish with courgette. Top with tomato slices. Sprinkle with parmesan and cheddar cheeses.
6. Bake for 20-25 minutes.
