Chicken Spinach Ziti

4 | skinless chicken breasts |
1 T. | olive oil |
1 large | shallot |
10 oz. | fresh spinach |
1 C. | fresh mozzarella |
4 oz. | cream cheese |
3 cloves | garlic |
1/2 C. | white wine |
1/2 C. | heavy whipping cream |
1 16 oz box | ziti |
Salt | |
pepper to taste |
Cook diced shallots and chicken breasts in olive oil in deep sauce pan. After chicken is cooked, add garlic and cook for another minute.
Add white wine and cook on medium heat until wine is reduced by half.
Reduce heat and add cream, cream cheese, and mozzarella. Cover and cook on medium/low heat until melted and mixed.
Serve over ziti with bread.
