Creamy Potato Bacon Soup

1 tbsp | butter |
1 cup | chopped onion |
2 tbsp | flour |
1 1/2 tbsp | chicken bouillion |
4 cups | water |
1 | bay leaf |
1/2 tsp | salt |
1/4 tsp | pepper |
4 cups | diced potato |
1 cup | half and half |
1 cup | cheddar cheese |
1 package | bacon, cooked crispy |
Directions:
Melt butter in frying pan. Add onion and sauté until soft. Mix in flour and bouillion. Stir in water until boiling and slightly thickened. Add remaining 6 ingredients. Cover. Simmer for about 30 minutes until potato is cooked. Discard bay leaf. Run mixture through blender. Add bacon.
