BBQ Sauce for Spare Ribs
    200ml  tomato ketchup
    200g  dark brown sugar
    3 cloves  garlic
    4 tbs  teriyaki marinade
    3 tbs  sweet chilli sauce
tabascco sauce/chilli sauce – according to taste s & ground pepper In a bowl, stir the ketchup and sugar together. Add garlic, teriyaki marinade,sweet chilli sauce and Tabasco, if using. Season with S & P. Will keep fresh for 1 week in fridge. Can use any spices once you have the ketchup and brown sugar.
      Spare Ribs

For 4 people allow 2kg of meaty ribs.
1 quantity of spare rib sauce
S & P

Cook ribs in oven on low for about an hour 150c/300f
Scrunch up foil and place in large baking tray. Fill 600ml water and cover with foil so ribs are basically steaming.

Cool before coating with sauce and leave for 1-2 hours.
Cook over direct medium heat for 6-8 mins then turn down and cook for a further 15 mins basting frequently.
