Coconut Chicken Curry

|4 oz||chicken fillet|
|1 tbsp||double cream|
|¼ pint||chicken stock|
|¼ tsp||ground cumin|
|¼ pinch||ground coriander|
|¼ tsp||ground ginger|
|¼ tin||coconut milk|
1. Add low calorie spray to a frying pan. At a medium-high heat fry the chicken fillet cubes.
2. Meanwhile gently heat the double cream and coconut milk in a pan, while adding the spices and finally the chicken stock.
3. Once this has heated up, add the chicken pieces and leave it to simmer for 15-20 minutes, or until cooked through.
