Bacon & Spinach Pasta

2 oz | pasta |
1 rasher | bacon |
2 oz | onion |
2 oz | mushrooms |
1 ball | frozen spinach |
1 small tin | canned tomatoes |
1 clove | garlic |
1 pinch | mixed dried herbs |
1 tsp | olive oil |
1. Cook the pasta following package directions, omitting any suggested fat or salt.
2. Heat the olive oil in a pan and add the chopped onions and crushed garlic and cook for a couple of minutes to soften. Add the sliced mushrooms, spinach, tomatoes and herbs, and cook for 8-10 minutes.
3. Meantime, grill the bacon and then cut into bite-sized pieces.
4. Stir the cooked and drained pasta into the vegetable sauce and bacon pieces. Cook until heated through, and serve.
