Orzo, Crab, and Tomato Salad
Nb persons: 6
|6 large||tomatoes, seeded and diced|
|1 lb.||crabmeat, cooked and cooled|
|1/2 cup||spring onions, chopped|
|1 medium||cucumber, peeled, seeded and diced|
|2 T||prepared horseradish|
|juice of one lemon|
|1/2 cup||olive oil|
|salt and pepper, to taste|
Cook orzo in pot of rapidly boiling salted water until al dente (about 8 minutes). Drain very well.
Combine orzo with all other ingredients.
Serve at room temperature.
