    1¾ cups  whole wheat pastry flour, (could sub all purpose)
    1 tsp.  cinnamon
    ¾ tsp.  salt
    ¾ tsp.  baking soda
    ½ tsp.  baking powder
    1  ripe banana, mashed
    ½ cup  sugar
    ⅓ cup  coconut oil
    2 tbsp.  unflavored soy or almond milk
    1 tsp.  vanilla extract
    1 cup  grated zucchini
    ½ cup  raisins
    ½ cup  walnuts

INSTRUCTIONS
Preheat oven to 350°.
Grease or coat loaf pan with cooking spray.
Stir flour, cinnamon, salt, baking soda and baking powder together in medium mixing bowl.
In a separate bowl, stir sugar and banana together. Add oil, milk and vanilla extract.
Add banana mixture to dry ingredients and stir just until blended.
Fold in zucchini, followed by raisins and walnuts.
Pour mixture into loaf pan. Bake 50-55 minutes.
