2 tbsp | vege oil |
1 cup | chopped onions |
3 garlic cloves minced | |
1 tsp | ground coriander |
1 tsp | ground cumin |
1/4 tsp | turmeric |
Cayenne to taste | |
300g | red lentils |
9 cups | chicken stock |
5 carrots finey chopped | |
1 | red pepper finely chopped |
1 handful | fresh cilantro |
1/4 cup | fresh green onion |
1. In a saucepan heat oil on med-high. Sauté onion. Add garlic. Add spices. Add veggies, lentils and broth. Boil gently for 20 min.
2. Stir in fresh stuff
3. Add cubed ham if you want or top with sour cream or feta
