2 celery stalks finely chopped (1 C) | |
2 | carrots diced, (3/4 C) |
6oz | gender beef |
6 oz | ground veal |
3 oz | diced pancetta |
1/2 C | dry red wine |
3 C | beef stock, divided |
3 T | Tom.paste |
1 C | whole milk |
Kosher salt, black pepper, parm cheese |
Sauté veggies in oil for 8-10 min
Add meats and brown about 15 min season with salt & pepper
Add wine boil 1 min
Add 2.5 C stock and tom paste simmer 1.5 hrs
Gradually add milk cover sauce with lid slightly ajar simmer and stir until milk is absorbed approx 45 min. Add stock 1/4 C at a time to thin if needed.
Serve over tagliatelle or fettuccine.
