    2 T  evoo
    2 medium  onions finely chopped, (1.5 C)
2 celery stalks finely chopped (1 C)
    2  carrots diced, (3/4 C)
    6oz  gender beef
    6 oz  ground veal
    3 oz  diced pancetta
    1/2 C  dry red wine
    3 C  beef stock, divided
    3 T  Tom.paste
    1 C  whole milk
      Kosher salt, black pepper, parm cheese

Sauté veggies in oil for 8-10 min
Add meats and brown about 15 min season with salt & pepper
Add wine boil 1 min
Add 2.5 C stock and tom paste simmer 1.5 hrs
Gradually add milk cover sauce with lid slightly ajar simmer and stir until milk is absorbed approx 45 min. Add stock 1/4 C at a time to thin if needed.

Serve over tagliatelle or fettuccine.
