Antipasto Skewers Ingredients: Bamboo Skewers | |
Mozzarella balls | |
Tri-Colored Tortellini Pasta Artichoke Hearts | |
Pepperoni | |
Mortadella, alternative | |
Turkey | |
Ham | |
Cherry Tomatoes | |
Black Olives | |
Green Olives | |
Basil leaves | |
FOR THE VINAIGRETTE Ingredients: zest from 1 lemon | |
Juice from 1 | lemon |
1 T. | Sherry Vinegar |
1 | Garlic Clove, minced |
1 t. | Salt |
1/4 t. | Pepper |
1/3 C. | Extra Virgin Olive Oil |
Directions:
Combine everything but the oil in a small bowl, then gradually whisk in the oil to emulsify the vinaigrette.
Makes about 2/3 Cup.
Directions:
Divide the above ingredients onto each skewer (3 tortellini per skewer)
Make several combinations of the above ingredients, keeping in mind a combination for vegetarians. Keep separate from the meat skewers!
Place skewers on platter and drizzle vinaigrette atop of skewers just before serving.
