1/4 C. | White-Wine Vinegar |
1 T. | Dijon Mustard |
Coarse Salt | |
fresh ground Pepper | |
Pinch | Sugar |
3/4 C | Extra-Virgin Olive OIl |
Directions: In a small bowl, whisk together the vinegar, mustard, salt, pepper and sugar Slowly add the oil, whisking until emulsified, or shake the ingredients in a jar. Store in an air tight container or jar and refrigerate for up to 2 weeks. Shake before using. Variations: Garlic Vinaigrette: - Add 1 t. minced garlic Balsamic - Substitute balsamic vinegar for the wine vinegar Lemon-Parmeggiano - Use fresh lemon juice instead of vinegar; add 3/4 C finely grated parm. | |
