Ingredients:
    1/4 C.  White-Wine Vinegar
    1 T.  Dijon Mustard
      Coarse Salt
      fresh ground Pepper
    Pinch  Sugar
    3/4 C  Extra-Virgin Olive OIl
Directions: In a small bowl, whisk together the vinegar, mustard, salt, pepper and sugar Slowly add the oil, whisking until emulsified, or shake the ingredients in a jar. Store in an air tight container or jar and refrigerate for up to 2 weeks. Shake before using. Variations: Garlic Vinaigrette: - Add 1 t. minced garlic Balsamic - Substitute balsamic vinegar for the wine vinegar Lemon-Parmeggiano - Use fresh lemon juice instead of vinegar; add 3/4 C finely grated parm.
      Scallion, Add 3 chopped whole scallions (about 3/4 Cup)
      Blue Cheese, Add 1/2 C. crumbled blue cheese such as roquefort
      Herb, Add 2 T chopped fresh herbs, such as thyme, parsley, or tarragon.
