Garlicky Scalloped Tomatoes

8 cloves | garlic, peeled |
2 tbsp | olive oil |
2 cups | cubed bread |
5.5 lbs | plum tomatoes, roughly chopped |
2 tbsp | sugar |
2 tsp | salt |
1 tsp | pepper |
1/2 cup | julienned basil leaves |
1 cup | grated parm |
Preheat oven to 350. Mash garlic cloves until it forms a smooth paste.
Heat olive oil in large skillet over medium heat. Add bread cubes and cook for about 5 mins, tossing often, until bread is golden brown.
Stir together tomatoes, sugar, salt, pepper and garlic in a large bowl. Add the tomato mixture into the skillet and cook for another 3-4 mins. Remove from heat and stir in basil.
Pour tomato mixture into large baking dish. Sprinkle cheese on top. Bake 35-40 mins.
