1 Cup | Water |
3/4 Cup | Fit & Active Brown Rice |
1 Clove | Garlic |
1/2 Ounce | Red Sweet Pepper |
1/2 Ounce | Green Bell Pepper |
1 Ounce | Sweet Peppers |
1 Ounce | Yellow Onions |
1-1/2 Ounce | Red Onions |
1-1/2 Ounce | Mushrooms |
1-1/2 Tsp. | Olive Oil |
1 Tbs. | Bangkok Padang Peanut Sauce |
4 Ounce | Tilapia |
Step 1:
Place water in a small pot and bring to a boil, then add rice.
Cover and reduce heat, simmering until water has been absorbed stirring occasionally.
When rice is finished remove from heat and set aside.
Step 2:
While the rice is cooking chop your garlic, peppers, onions, and mushrooms.
Add olive oil to medium sauté pan and bring to high heat.
Add vegetables and fry for 5 minutes stirring constantly.
Remove from heat and set aside.
Step 3:
Pull apart tilapia and cover in Peanut sauce.
Add to sauté pan and fry for 1 minute.
Then add vegetables.
Step 4:
Place rice on a plate and top with stir fry.
Enjoy.
