Ingredients:
    3 lbs.  split peas
    4  bay leaves
    4 Tbs  Chopped parsley
    2 strips  bacon
    1/4 cup  olive oil
    24 cups  Veg broth-, (8 cps/lb of peas)
    4 Med  Onions-,, (~1 1/2 / lb of peas)
    3 Tbs  chopped fresh thyme
    9  carrots-,, (3 / lb of peas)
    6 Tbs  lemon juice-,, (2 / lb of peas)
    1 Tbs  Cumin
    1 med bunch  scallions thinly sliced
6 ham knuckles
    1/2-1lb  smoked ham cut in thick slices and cubed
      Salt
      pepper to taste

Directions:

1) In large iron kettle cook two strips of bacon
2) drain off most of bacon fat and add olive oil
3) Over medium heat, add carrots, onions, celery, 1Tbs thyme, salt and pepper
4) Cook 10 minutes until tender
5) Add vegetable stock, ham knuckles, peas, bay leaves, scallions, cumin,and rest of chopped thyme.
6) Simmer for two hours and remove bay leaves, ham knuckles, strips of bacon
7) Add cubed ham and ham from knuckles and let sit for 30 minutes.
