Carrot Almond Muffins

1 1/2 cups | nut flour, ( almond) |
1 1/2 cups | finely shredded carrots |
3/4 cup | honey |
1 tsp | baking soda |
1/2 cup | butter or coconut oil |
2 | eggs |
1 tsp | cinnamon |
Pinch | sea salt |
1 tsp | vanilla |
Add honey and eggs to softened butter or coconut oil and blend.
Blend flour, soda, sea salt, cinnamon, and vanilla.
Add carrots.
Bake at 350 for 22-24 minutes. Makes 2 dozen muffins.
