    1 1/2 lb  pork shoulder trimmed of fat
lightly salted water about 3 cups 1/2 onion stuck with 2 cloves
    2 cloves  garlic, peeled
    5  peppercorns
1/2 team whole cumin seed
    pinch  oregano

Place the meat in a saucepan, barely cover with water and add the remaining ingredients. Bring to a boil over medium heat, skim off the foam that rises, and cover the pan. Simmer gently for 45 minutes do not allow the water to boil. Turn off the heat and let the pork cool in its own broth.
Shred the meat.
