Who doesn’t like the idea of warm oatmeal cookies on a cold day? They’re not only satisfying and hearty, but they taste great as well. The problem is, they are usually loaded with sugar, fat and calories. What if you could have the same wonderful cookie without all the guilt? These Cleveland Clinic oatmeal cookies are exactly what you’re looking for. At only 80 calories a cookie, they provide fiber to keep you fuller for longer, prunes to keep you regular, and walnuts to provide omega-3 fatty acids. Now that sounds like a better cookie to us!
      Oatmeal Cookies
Makes 36 Servings – Serving Size:
    1  cookie
Ingredients
    3  bananas, ripe
    ½ cup  canola oil
    2 teaspoon  vanilla extract
    ¼ cup  walnuts, toasted and chopped
    ¼ cup  pecans, toasted and chopped
    ¼ cup  prunes, dried, pitted, no sugar added, chopped
    1 cup  raisins,, (yellow or red)

2 cup oatmeal – plain, old fashioned

Directions

In a large mixing bowl, add and mash bananas with hand masher, combine and mix in canola oil, vanilla, walnuts, pecans, prunes and raisins. Add oatmeal and mix all ingredients together until well mixed. Using a 1-ounce scoop, measure and drop on to parchment-covered cookie sheet, slightly push down with fingers to lightly flatten. Bake at 350° F for 20 minutes. Remove, let cool and serve.
