3 | egg yolks |
2 tablespoons | fresh lemon juice |
1/8 teaspoon | salt |
1/8 teaspoon | cayenne pepper |
1/2 cup (1 stick) | butter |
Instructions
Combine egg yolks, lemon juice, salt and cayenne in blender.
Cover.
Quickly turn blender on and off.
Melt butter in microwave or on stovetop until it is bubbling but not browned.
With blender running, slowly pour a thin stream of hot butter into egg yolk mixture, blending until thick and fluffy, about 30 to 60 seconds.
Serve immediately or place blender container in a warm water bath until ready to serve
